The Paitin winery is one of the great historical producers of Barbaresco in the region: the first bottle of their Barbaresco Sori Paitin dates back to 1893. Today the business is managed by the brothers Giovanni and Silvano Pasquero Elia, who, since 2010 have entrusted control of the cellar to Dante Scaglione, former winemaker in the Bruno Giacosa winery. In the 17 hectares of vineyards owned, the company cultivates Nebbiolo, Barbera, and Arneis, for the production of wines widely appreciated both in Italy and abroad.
The grapes of Arneis, an indigenous Piedmontese variety, come from the Elisa vineyard in Roero. After a delicate pressing of the grapes, the must is left in contact with the skins for 24 hours and then matured on the lees for six months, giving the wine a very pleasant fruity intensity and great vivacity.
The Arneis Elisa is the only white wine produced by the Paitin winery. In the glass, it shows a straw yellow color. On the nose, the aromatic profile reveals aromas of peach and grapefruit followed by floral notes and hints of almond. In the mouth, the wine is pulpy, well structured, and with a distinctive acidity. The finish is long and slightly peppery. It is a distinctive and elegant white that goes deliciously with white meats and fatty fish.
