    La Cipriana wijnhuis, het derde dat gevestigd is in het Bolgheri DOC gebied, werd opgericht in 1975 door de broers Carlo en Luigi Fabiani. Het bedrijf, sinds 2001 geleid door de dochter van Carlo, Laura, bestaat nu uit 8 hectare wijngaarden, plus 2 recent aangekochte, en 3 van olijfgaarden beplant met de rassen Moraiolo, Leccino, Pendolino en Frantoio. De wijngaarden liggen deels rond het zakencentrum waar ook de agrotoeristische accommodatie is gevestigd, en deels aan de Via Bolgherese in het gebied dat "Scopaio" heet.

    Cipriana Bolgheri San Martino DOC is een volle rode wijn met een intens robijnrode kleur, zo diep en sterk als het land waar hij vandaan komt. Zijn heerlijke geur doet denken aan bessen, in een complexe reeks aroma's van balsamico tot bloemen, van fruitig tot kruidig. De blend is een evenwichtige mix tussen Cabernet Sauvignon en Petit Verdot, met een smaak die gestructureerd overkomt in de mond maar tegelijkertijd zacht en omhullend is, en waarvan de harmonie na verloop van tijd blijft bestaan. Het is een geweldige partner voor wild, vooral wild zwijn, of gerijpte kaas.
